Healthy meals with coupons!

We all know that couponing saves you cash, but now what do you do with that stockpile of food? How do you put it together to make a great meal?

Michelle from Michelle Bank, Rose from Rose Knows Coupons & Bree from Coupons on Caffeine, and Rita from Chitowncheapskate feel your pain!
We’re here to help each Thursday with a new healthy recipe to add to your repertoire. All meals will cost $9.95 or less, they will ALL be healthy and prepared by one of these frugal bloggers!

     

    Today’s meal is from me….I had all this on hand in my house and it was a bit of a last minute decision to make it since I really didn’t feel like eating Chicken.  So, I made Chicken Fried Rice!

    Chicken Fried Rice

     

    • 3 Chicken Breast – Dominick’s $5 for Purdue Frozen Hormone Free.  8 Chicken Breast came in the box $.63 ea or $1.87 total
    • 2.5 cups brown rice- Minute Rice on Sale for $2.49 with a $1 peelie on the box $1.49
    • Baby carrots about 5 diced- $.99 bag of baby carrots
    • ½ onion- $.99 for a 3 lb bag, used 1 onion from the bag
    • ½ bag of frozen peas- $.14 for the bag-Target with $5 gift card and coupons
    • 1tbs olive oil
    • 1 tbs butter
    • 3 tbs low sodium soy sauce
    • 2 eggs- eggs were free with buy 2 OJ at Jewel.

     

    Salt and pepper chicken and Bake chicken 375 degrees for 30 mins.

    Directions:

    Heat Rice.

    Sauté the onions and carrots in oil and butter until tender.  Add in ½ the rice after cooked to “fry” it.

    Move rice to one side of the pan.  Scramble the eggs on the other and incorporate them into the rice.

    After chicken is cooked, Dice and add to rice mixture.  Add in Peas, Continue to cook.  At the end I add in the Soy Sauce.

    I have a daughter with an allergy to Sesame Seeds….I can’t use Sesame oil, however, I think you could use it in place of olive oil for a deeper taste.  I added in about 1tbs of brown sugar to the Soy sauce and mixed it for a little sweeter taste.  I left that out since not everyone likes the flavor.

    The meal cost me $5.48.  I also put Pillsbury rolls on the side, they were $.75.  Originally $1, but I had a coupon for $.75 off 3 so I bought 3 making them $.75 each.

    With the rolls….$6.23! YUMMY!
